Inspiration:
This recipe came about as a spur of the moment epiphany.. otherwise known as a mistake -- I had forgotten the syrup to make a specific drink for a photo shoot, and wanted to think up a recipe on the spot. I had a bunch of rums on hand, and thought "what ingredients do I have to create something unique?"
I remembered seeing a recipe somewhere online which called for the syrup from a jar of maraschino cherries... which is an extremely common ingredient for cocktail enthusiasts, or even lovers of baking.
Quite often the syrup left in these jars is overlooked and thrown away. In the vein of less waste, I said "why not try and make good use of this."
Not thinking this would lead to anything amazing, I was extremely fascinated by the result of cherries complimenting the rum.. Proving once again, if you know your basics, experimentation is much easier! With some slight adjusting through the week, I arrived at this recipe.
Why I Love This:
Being that cherries are native to Europe, North America, North Africa and West Asia, they are not often seen paired with rum in a tiki cocktail format! That being said... breaking rules is why we learn them in the first place. The incorporation of exotic ingredients into the tiki format over time has been a long lasting part of the culture.
Combining this with one of my favorite tiki cocktail formats -- that of Donn the Beachcomber -- I think I found specs for this one that I enjoy.
Donn's style of cocktail usually implies LOTS of ingredients, with multiple juices, multiple sweeteners, and even multiple rums. While this allows room for plenty of additional flavors, it's still optimized for the cherry to cut through.
Recipe:
2 Oz Flor de Cana white rum (any lightly aged white rum works)
1/2 Oz lime
1/2 Oz orange juice
1/2 Oz maraschino syrup (from jar)
1/2 Oz honey syrup 2:1
1 dash peychaud's bitter
1 dash grapefruit bitters (optional)
Rum choice: I believe Flor de Cana white to be a good base for other flavors to take the lead. There is probably room for further experimentation in the rum category here, but I would recommend something not too flavorful.. hence, most white rums will work.
